Here is what each of those means in practice, and why a song might suit one over another. Which one fits yours is worth talking through with Nate before the mix starts.
Fully digital
The whole mix lives inside the session: every fader move, plug-in setting and automation pass is saved with the project. That makes a digital mix easy to recall and revisit, and a natural fit for dense, programmed productions and for songs that may change after the mix.
Analog
Tracks leave the computer and run through analog hardware before the mix is printed back in. Artists often choose it for the character hardware adds to drums, bass and vocals, and for a mix that is committed rather than endlessly tweaked.
Anything in between
The session stays digital and chosen tracks or groups go out through hardware and back. It keeps the recall of a digital mix and adds analog colour only where it counts: a common middle path for records that want some of both.
